Pumpkin Chicken Curry But Skip The Pie

I didn't see an actual pumpkin until I came to America in 78 and my first taste, a pumpkin pie, left me cold . So I was never a fan of anything pumpkin, that is until I tried this recipe. I love a curry so when I saw a recipe for Pumpkin Chicken Curry  by Heather Christo I thought I’d give it a go and WOW did it become my absolute seasonal favourite.
